Yesterday was the first day of the Bangla month of Agrahayan. As winter approaches slowly and the time is ripe for harvesting, it brings joy and gaiety to our rural denizens. The festival of the new harvest is an age-old tradition known asNabanna.

During this season the women folk are busy preparing varieties of pithas or the winter cakes from the newly harvested paddy. The pitha making ceremony is an important aspect of our cultural tradition.

Among the numerous varieties of pithas prepared during this season are dhuki, bhapa, chitoi, patishapta, pakan, nakhsi and dudkikini. Chitpitha with cooked duck is a delicious item.

Chitoi immersed in date juice and mixed with coconut is another delectable preparation.

In recent times the pithas have made inroads into the cities as well. Students are often seen streaming to the small stalls that sell steaming dhuki pithas for a meagre sum. The winter cakes, made from simple ingredients such as powdered rice, coconuts and mollasses, are sold in front of the universities, colleges and even offices.

Young and old can equally enjoy the delicious pithas from the nearest vendor.
